Our flagship red. Made only in select years, this wine represents the pinnacle of shiraz making here at the Hill. Hand selected bunches from low yielding 40 year old vines are the foundation of this wine. A big ripe blackberry/mulberry fruit palate, subtle hints of spice, and luscious savoury tones are interwoven with touches of Hunter earthiness. 14 months maturation in our best French oak, ensures the tannins are fine and smooth. Serve with Pokolbin Hare, or a Scotch fillet steak with peppercorn sauce.
This is a medium bodied wine, displaying luscious spicy plum jam and blackcurrent flavours, balanced with toasty oak and traditional Hunter earthiness. A rich middle palate accompanied by fine smooth tannins makes this a traditional easy drinking style, whilst still retaining a complex character and structure. A must for lamb shanks, or try basil and prosciutto wood fired pizza.
A fine example of this noble French grape variety.Made from a specially selected parcel of single vineyard Hunter grapes, it displays mouth filling flavours of blackcurrant and blackberry, combined with some subtle toasty vanillan highlights, from oak barrel maturation, and some silky smooth tannins.

Made from Shiraz grapes this wonderful summer wine is just the call for when the mouth says red but the thermometer says white!! Fresh and fruity, with big ripe cherry and strawberry flavours. Best served with a second bottle of Rose!!

The epitome of Hunter Valley Shiraz, this wine is medium to full bodied with rich mulberry and blackberry flavours, smooth tannins and a subtle hint of spice. These flavours are enhanced by maturation in new & old French & American. Excellent with seared rump of kangaroo, Peking duck or a big, fat T-bone on the BBQ! Drinking now, or cellar to 8 years.
