2023 William Henry Shiraz

Our flagship red. Made only in select years, this wine represents the pinnacle of shiraz making here at the Hill. Hand selected bunches from low yielding 40 year old vines are the foundation of this wine. A big ripe blackberry/mulberry fruit palate, subtle hints of spice, and luscious savoury tones are interwoven with touches of Hunter earthiness. 14 months maturation in our best French oak, ensures the tannins are fine and smooth. Serve with Pokolbin Hare, or a Scotch fillet steak with peppercorn sauce.

Our flagship Merlot. Produced only in select vintages this is a stunning example of what 2023 had to offer. A medium bodied wine that displays both opulence and elegance. Ripe plum and blueberry characters imbued with beautifully balanced toasty elements from a year in New French oak barrels. Soft spice and a little earthiness make this wine a keeper. Slow cooked leg of lamb is a must. Drinking now but this wine would definitely benefit from a few years in the cellar.
